La finalidad de este estudio es analizar estrategias y acciones que los hoteles aplican para gestionar residuos sólidos de las áreas de restaurante y eventos. La metodología empleada fue la revisión bibliográfica, basada en análisis de fuentes académicas nacionales e internacionales sobre la gestión de residuos sólidos que se maneja en diferentes hoteles localizados a nivel mundial. El estudio identifica los procesos dados en las áreas de restaurantes y eventos en hoteles; a partir de ello se identificaron los principales tipos de residuos sólidos generados. Finalmente, se detallan los beneficios económicos, ambientales y sociales que brinda la gestión de los residuos sólidos. En cuanto a resultados, se establecieron que las principales estrategias aplicadas por los alojamientos inciden en la formación de los huéspedes y colaboradores, así como en fortalecer una conciencia ambiental y promover el reciclaje mediante programas o campañas. Se establece que, pese a que los hoteles son responsables de administrar sus residuos, si no existe una adecuada educación ambiental en los clientes internos y externos las estrategias no serán exitosas, ya que es notoria la influencia de la cultura y educación medioambiental. Por ello, aun cuando las estrategias puedan estar ya definidas, los colaboradores deben ser capacitados, pues son los responsables de implementarlas correctamente al interactuar con los huéspedes y gestionar los residuos sólidos. Se concluye que, para garantizar la efectividad de las estrategias, estas deben adaptarse a los hoteles, considerando su infraestructura, volumen de residuos y cantidad de trabajadores.The purpose of this research study is to analyze the strategies and actions that hotels apply for the management of solid waste in the restaurant and event areas. The methodology used was the bibliographic review, beginning with an analysis of national and international academic sources about solid waste management applied in different hotels worldwide. The study identifies the processes that occur in the restaurant and hotel event areas; with the information collected, the main types of solid waste generated in this type of accommodation were identified. Finally, the economic, environmental and social benefits provided by solid waste management are detailed. Regarding the results, it was established that the main strategies applied by the accommodations affect the training of guests and collaborators, as well as strengthen an environmental awareness, promote recycling and the creation of environmental programs. It is established that, although the hotels are responsible for managing their waste, if there is no previous environmental education for both customers and staff, the strategies will not be successful and in both cases the influence of culture and education is notorious. Therefore, even when the strategies may already be defined, the employees must be constantly trained, since they are responsible for implementing them correctly, by interacting directly with the guests and handling or managing solid waste. It is concluded that, to guarantee the effectiveness of the strategies, they must be adapted to the hotels, taking into account their infrastructure, volume of waste, number of workers and types of events.
