dc.description.abstractObjetivo: Este estudio tuvo como finalidad cuantificar el contenido de aflatoxinas totales (AF) en el maní tostado, a granel y envasado, expendido en los mercados de tres distritos de Lima Metropolitana. Materiales y métodos: La cuantificación de AF se realizó mediante un kit de detección rápida: RIDASCREEN®FAST Aflatoxin total. El nivel máximo de AF establecido por el Codex Alimentarius fue usado como criterio de evaluación para las muestras. Resultados: De las 18 muestras analizadas solo una arrojo resultados por encima del límite de 15 µg/kg; la muestra pertenecía al distrito de San Luis y su nivel de AF fue de 60 µg de aflatoxina/kg maní. Ninguna de las muestras de maní envasado arrojo niveles cuantificables de AF. Discusión: Los resultados del estudio indican que en general, existen bajos niveles de AF en el maní tostado expendido en los distritos incluidos en estudio. No obstante, debido al alto riesgo de salud relacionado con la ingesta de productos contaminados con AF, el personal de salud debe sopesar la indicación del consumo frecuente de maní tostado y/o productos derivados del mismo, hasta que las autoridades pertinentes realicen las evaluaciones sanitarias correspondientes. Conclusión: En líneas generales, el maní expendido en los tres distritos de estudio no superó el límite permitido por el Codex Alimentarius. No obstante, se encontró un caso aislado, el cual cuadruplicaba este límite, siendo un gran riesgo para el consumidor. Consideramos necesario realizar estudios adicionales que evalúen los niveles de AF en otros distritos de Lima Metropolitana.en_US
dc.description.abstractObjective: The purpose of this study was to quantify the total aflatoxins levels (AF) in roasted, bulk and packaged peanuts, sold in markets of three districts of Metropolitan Lima. Materials and methods: The AF levels determination was performed using a rapid detection kit: RIDASCREEN®FAST Aflatoxin total. In this study, we used the maximum AF level set by the Codex Alimentarius as an evaluation criterion for the samples. Results: Only one out of 18 samples surpassed the 15µg/kg limit; the sample belonged to the district of San Luis and contained 60 µg of aflatoxin/kg of peanut. None of the packaged peanut samples yielded measurable AF concentrations. Discussion: In general, the results of this study showed that roasted peanuts distributed in the markets of three districts of Lima have low levels of AF. However, considering the adverse health risk associated with the intake of products contaminated with AF; health personnel should be cautious about recommending frequent consumption of roasted peanuts and/or peanut products until appropriate safety assessments are carried out by the authorities on this product. Conclusions: Overall, peanuts distributed in three districts of Lima did not exceed the limit set by the Codex Alimentarius. However, we found high levels of AF in an isolated case, which showed four times this limit, involving a considerable health risk to the consumer. Further studies are needed to assess the AF levels of peanuts in other districts of Lima.en_US
