El presente trabajo de investigación tiene como finalidad dar a conocer cuáles son los factores críticos que no permiten la comercialización, en el mercado ‘tradicional’ de Lima Metropolitana, del pollo industrializado, aquel que ha tenido un proceso de sacrificio (beneficio), bajo estándares internacional de salubridad. De otro lado, pretendemos conocer por qué las personas prefieren consumir el pollo no industrializado (sacrificado sin medidas estándares), en vez del primero, aquel vendido en supermercados o retails. De otro lado, este estudio se ha llevado a cabo gracias a una recopilación y análisis de bibliografía, así como al uso de entrevistas a profundidad, realizadas a diferentes especialistas y personas involucradas en el sector avícola del Perú. Su justificación recae, por lo tanto, en lo económico, legal y empresarial, pero sobre todo en lo social, pues busca mejorar la calidad de vida de los que consumidores de Lima Metropolitana; además, buscamos llamar la atención de los organismos correspondientes para que se permitan estandarizar los procesos de producción, bajo normas sanitarias internacionales. Luego de este análisis, de tipo descriptivo-explicativo, se obtendrán resultados que son de importante valor, pues ayudarán a mejorar la calidad de los productos que se consumen, así como a la optimización de la industria avícola en el Perú.The purpose and scope of this study are to inform upon what are the critical factors that impede the commercial sale of standard industrially processed poultry in Lima’s traditional metropolitan food market. Also within the scope of this research paper is to understand why today consumers might prefer to purchase alternatively processed poultry products such as “free-range,” “organic” or "pastured" instead of standard industrially processed poultry. Research methods involved in the creation of this study include research and analysis of scholarly texts, in-depth interviews conducted with different industry subject matter experts and other people associated to the Peruvian poultry industry. There are critical legal, economic, and business factors for justifying but it is the social factors which explain the social factors point to a desire towards improving consumer quality of life standards within the metropolitan área of Lima. Consumers also wish to increase awareness on the present conditions of the poultry industry while moving towards growing production standardization processes towards meeting higher international sanitation standards. Following this descriptive-explanatory analysis, the obtained results will serve to improve poultry product quality as well as optimize the Peruvian poultry industry.
