Desde hace casi una década, la gastronomía se ha convertido en uno de los sectores de mayor crecimiento en el país, aportando en la actualidad el 6% del PBI y generando un promedio de 60,000 puestos de trabajo en más de 20,000 comercios. Por otro lado, existen 583,000 adultos jóvenes, de los cuales el 51% suele gastar su dinero en salir a comer, siendo la actividad que realizan con mayor frecuencia. De este segmento, el 45% visita de forma ocasional los restaurantes de comida rápida y el 38% los centros comerciales. Estas estadísticas representan una interesante oportunidad para introducir una atractiva propuesta gastronómica basada en la implementación de un restaurant de comida rápida que fusione la comida criolla con el concepto de siete colores, una opción culinaria que combina diversas comidas criollas en un solo plato. El Plan de Negocios comprueba la viabilidad del proyecto. Primero, se hace un diagnóstico del macro y micro entorno para determinar las fortalezas y debilidades de la empresa, así como sus objetivos y estrategias. Luego se cuantifica la demanda del proyecto y se formula la mezcla de mercadotecnia. Después se desarrolla el plan para determinar los procesos de la cadena de valor, capacidad instalada, niveles de producción y constitución de la empresa. Finalmente se establece el estudio financiero que detalla la inversión y el financiamiento requerido, así como los estados financieros proyectados, concluyendo que es viable al tener valores positivos para el VAN: 160,832, TIR: 39.01% y Payback: 3.37 años.For almost a decade, gastronomy has become one of the highest growing sectors in the country, currently contributing with 6% of GDP and generating an average of 60,000 jobs in more than 20,000 businesses. On the other hand, there are 583,000 young adults, of whom 51% usually spend their money going out to eat, being the activity they perform most frequently. Of this segment, 45% occasionally visit fast food restaurants and 38% shopping centers. These statistics represent an interesting opportunity to introduce an attractive gastronomic proposal based on the implementation of a fast food restaurant that fuses creole food with the concept of "Seven Colors", a culinary option that combines several creole foods in a single dish. The Business Plan verifies the viability of the project. First, a diagnosis of the macro and micro environment is made to determine the strengths and weaknesses of the company, as well as its objectives and strategies. Then the demand of the project is quantified and the marketing mix formulated. Then a plan is developed to determine the value chain processes, the installed capacity, the production levels and the constitution of the company. Finally, the financial study details the investment and the financing required, as well as the projected financial statements, concluding that the project it's viable by having positive values for the NPV: 160,832, Payback: 3.37 years and IRR: 39.01%.
