Santiago de Surco is a district located in Lima – Perú, it has an estimated population of 345,000 people, according to INEI. Many bakeries, stores, pastries, markets, and companies offer their products in this district. These market has been growing over the last years, that is the reason why it is important to do a research which could be useful for these kind of business. This research seeks to determine the consumer profile of desserts in the district of Santiago de Surco in Lima. This research includes two parts; the first one is a qualitative part, which includes the application of focus group. The second part is quantitative; this one includes the application of 400 surveys to people who usually buy or eat desserts and who also live in the district. Through this research it has been determined that consumers are mostly married and were able to reach a university degree. Also they have a job, they work for a company or they run their one business. The consumers usually buy a dessert one or more times a week mostly as a whim of something sweet, sometimes they have a dessert at a party or a celebration. The range of prize they pay for a personal dessert is between S/.5.00 and S/.10.00 and for a familiar dessert they usually pay between S/.25.00 and S/.55.00. Their favorite places to buy a dessert are bakeries located in the district. Consumers prefer, in their great majority, citric, chocolate and fruit flavors such as banana, lúcuma or chirimoya. They consume both, national and international desserts but they mostly like classics such as arroz con leche, picarones, lemon pie, strawberry and sauco cheesecake and chocolate cake. Consumers are mostly willing to try new flavors; they also look for additional services at bakeries such as delivery, discounts, complimentary degustation, and fidelity and gratuity plans. External factors which influence their decision mostly are quality and taste, also the weather affects their decision, consume of desserts increases when the weather is cold. Consumer mood does not influence very much but a bad experience definitely does.Type
